PASTA SALAD
With warmer weather on the horizon this is a fav of ours....

Make pasta according to directions then mix in with pre-prepared salad dressing ("Knorr" or "Club House" Pasta Salad Dressing Mix) or your favourite salad dressing (balsamic might be good)
Mix well and then add various ingredients such as:
artichoke quarters, roma tomatoes, mushrooms, capers, sun-dried tomatoes, zucchini, pitted black olives, broccoli bits, etc.

To make it a meal, add some cooked chicken (to keep it easy, grab a cooked BBQ chicken from Costco.)

THE PERFECT DESSERT FOR YOUR CHAPTER POT LUCK


STRAWBERRY SWIRL CHEESECAKE

Serves 16




Preheat oven to 325F

1 1/4 cups graham cracker crumbs (or pre-made graham cracker pie crust)

1/4 cup melted butter


4 -250g pkg cream cheese, softened


1 cup sugar

3 tablespoons flour

1 tsp vanilla

1 cup sour cream

4 eggs

1/3 cup strawberry jam 


Mix crumbs and butter then press firmly into bottom of file lined 13x9" baking pan
Beat: cream cheese, sugar, flour, vanilla  - in large bowl on med. until well blended.
Add sour cream and mix well.
Add eggs, one at a time beating on low.
Pour mixture over the crust
Microwave jam on high for 30 sec then gently drop jam by small spoonfuls over the top of the batter and taking a knife cut through batter several times and swirl.

Bake 40 min or until center is almost set. Cool.

Place in fridge for at least 4 hrs or overnight. 





HOW TO COOL DOWN ON A HOT SUMMER DAY


With the hot summer days we are always looking for ways to cool down and right now even sitting in the shade can be hot so how about a nice cool drink?
Invite some friends over to share some of these:


RASPBERRY LEMONADE SLUSHIE
2 cup fresh Raspberries (frozen)
Juice of 2 Lemons
1/2 cup Sugar
2 cup Ice Cubes


Toss ingredients in blender and blend until ready.

Alternate recipes: each serves 4

1 lb frozen raspberries
2 cups ice
1/2 of a 12 oz. can of limeade
1 cup water


Peach Fruit Slushie


1 lb frozen peaches
1 cup ice
1/2 12-oz can of frozen limeade

1 1/4 cups water
